The book examines the peculiarities of the formation, growth and development of berries and their chemical-technological diversity in clusters of grapes as a result of the acropetal nature of the growth of inflorescences and clusters. Peculiarities of grape cluster quality deterioration and spoilage while on the plantation after harvesting, storage in conditions of high and low relative humidity, as well as in conditions of modified and controlled atmosphere, including from the development of epiphytic microflora, were studied. Data on chemical and technological features of a large number of table grape varieties, the influence of varietal, agroclimatic and technological factors on the preservation of grapes during storage and transportation are presented.
