The textbook was prepared in accordance with modern scientific achievements aimed at improving the technology of soft drinks, organizing their production on a scientific basis and conducting its control in order to ensure high quality and safety of the products produced. The purpose of the book is to form technological thinking and deepen knowledge that constitute the theoretical basis for studying the modern technology of production of soft drinks using new types of raw materials, intermediates and auxiliary materials, including those with therapeutic and preventive properties.
