The workshop outlines the main provisions of the technology of non-alcoholic and alcoholic beverages, provides methods for calculating the main equipment of non-alcoholic production, consumption of raw materials, control and accounting in the production of non-alcoholic and alcoholic beverages, as well as requirements for product quality and considers the factors that form it. The textbook aims to form technological thinking and deepen the knowledge that constitutes the theoretical basis for studying the modern production of non-alcoholic and alcoholic beverages.
