Basics of meat refrigeration are considered. Described are methods of cooling, freezing and defrosting, as well as changing meat during refrigeration treatment. Conditions for transporting chilled and frozen meat are given. Technical basics of cold production are given. Much attention is paid to the level of development and prospects for cold processing of meat.
