The basic concepts of engineering rheology are given on the example of the production of raw smoked and boiled sausages. The role of engineering rheology in the improvement of technological processes is shown - from the choice of raw materials to the production of finished products of a given chemical composition and a certain consistency, estimated by rheological characteristics. Modern control methods are considered. Relevant instruments are described.
