There are dishes that can be attributed to the cuisines of different peoples. This similarity is explained by the use of common culinary techniques in their preparation, and the difference, on the contrary, lies in the characteristic features of each national cuisine. For example, the recipes for Ossetian pies and Georgian khachapuri presented in the book have much in common, but they also have their own characteristics.
