Tutorial consists of two parts. The first part gives diseases, labeling of meat of slaughter animals and poultry, quality requirements. Classification, assortment and quality examination of meat products are considered. In the second part, the main families of fish entering the trade are given, methods of fish processing are presented; classification, assortment and quality indicators of canned fish products are presented.
