The book analyzes the theoretical foundations and technological aspects of the processes of butter formation (from cream of different fat content), the formation of the structure of butter when it is produced by different methods. Peculiarities of production of separate varieties of oil of domestic assortment, in relation to used complexes of technological equipment, influence of these factors on composition, quality, consumer indices and preservation of oil quality are described.
