The textbook substantiates the need and feasibility of industrial use of secondary dairy raw materials. The composition and properties of skimmed milk, buttermilk and whey are given. The production technology of the main product groups and the quality management system are briefly described. The possibility of processing dairy raw materials in complete and closed cycles with elements of marketing and environmental monitoring is shown.
