The book "250 dishes of Chinese cuisine" describes the technology of preparing the most famous dishes of Beijing cuisine. It also provides the norms of products necessary for these dishes, and the weight of the finished products. In addition, methods for processing products brought from China and partially domestic are outlined. The proposed book is the first attempt to introduce food service workers and readers interested in cooking to the art of cooking in China.
