The properties, structure and nomenclature of milk proteins are considered, biological value, biotechnological properties of these proteins, their effect on the yield and quality of dairy products are presented, the role of proteins in the construction of fat pellets, the properties of peptides and plasmin are described in detail, biotransformation of proteins during storage and processing of milk is shown, methods for controlling some properties of milk proteins are proposed.
