This textbook, written for the first time for secondary specialized educational institutions in accordance with the program of the course "Technology of alcohol and distillery production," aims to provide students with the necessary basic knowledge of the technology of these industries. Particular attention is paid to the final production process - distillation and rectification of alcohol. A special chapter is devoted to the integrated use of raw materials and production waste. Methods are described here that allow the most complete use of all components of the raw material. The issues of loss reduction to be studied during the course are reflected in a separate chapter. In accordance with the program, material is described related to the production of vodka and liqueur products, from the preparation of semi-finished products to bottling and decoration of finished products, as well as to the use of waste and measures to reduce losses in liqueur production.
