Classification of fats is given. Physical and technical properties, physical transformations and methods for synthesis of fats, lipids, fatty acids and glycerol are considered. In this publication, all material is presented on the basis of a new systematic nomenclature, a section has been introduced on the main provisions of the reactivity of fatty acids.
