Recipes of branded bakery and flour culinary products for public catering enterprises were developed by the joint sanitary and technological food laboratory together with confectioners and culinary specialists of the Odessa region. The collection of bakery and flour culinary products is a normative and technical document containing uniform requirements for raw materials and finished products, determining the consumption of raw materials in the preparation of bakery and flour culinary products at a public catering enterprise.
