This textbook is intended for bachelors and masters of the direction "Technological machines and equipment," studying in the programs "Machines and aggregates of the food industry" and "Processes and apparatus of food production." In a brief but sufficient volume, the basic theoretical information of the most important sections of the course is described and methodological recommendations for performing laboratory work in a virtual implementation using the Adobe Flash CS3 Professional application package are given. A CD with the appropriate software is attached to the tutorial.
