The textbook describes the modern technology of granulated sugar and refined sugar. The issues of growing, harvesting, storing sugar beet, cleaning it from impurities and in more detail - the main stages of sand sugar production: co-production, purification and condensation of diffusion juice, crystallization of sucrose are briefly considered.
