Chemical composition, properties of milk, synthesis of its components in mammary gland cells, biochemical and physicochemical changes of milk during storage and processing are considered. Described are processes occurring in the production of fermented milk products, cheese, butter, spreads, canned milk, baby products and products from secondary milk raw materials.
